    摘要:

    目的 探索蛹虫草多糖发酵乳最佳加工工艺。方法 通过单因素及响应面试验优化蛹虫草多糖发酵乳加工工艺,并分析产品品质特性。结果 优化的工艺参数为纯牛奶添加量250 mL、木糖醇添加量35.3 g 、蛹虫草多糖添加量3.8 g、发酵菌种添加量0.4 g、腰果碎添加量15.0 g时,在温度42 ℃发酵10 h,此时产品感官评分达90分,与模型预测值(89分)高度吻合。酸度分析显示,试验组与对照组数据差异无统计学意义(P>0.05),均符合相关国家标准;色度检测表明,蛹虫草多糖的添加显著降低产品亮度(L*),增强红黄色调(a*b*),赋予发酵乳独特色泽。结论 研究结果为功能性发酵乳开发奠定了基础。

    Abstract:

    Objective This study aims to optimize the processing technology of Cordyceps militaris polysaccharide (CMP) fermented milk.Method Single-factor experiments and response surface methodology (RSM) were employed to refine the production parameters. Product quality attributes were also analyzed.Result The optimal conditions were determined as follows: pure milk (250 mL), xylitol (35.3 g), CMP (3.8 g), starter culture (0.4 g), cashew fragments (15.0 g), and fermentation at 42 °C for 10 h. Under these conditions, the sensory score reached 90 points, aligning closely with the predicted value (89 points). Acidity analysis revealed no significant difference between the experimental and control groups(P>0.05), both conforming to national standards. Chromaticity tests revealed that CMP supplementation significantly reduced product brightness (L*) while enhancing red (a*) and yellow (b*) tones, imparting a distinctive color to the fermented milk.Conclusion These findings provide support for the development of functional fermented milk products.
